Citrus Berry Chia Pudding

It’s summer, which means it's peak berry season! This Citrus Berry Chia Pudding is the perfect light, healthy treat or hearty breakfast/lunch on-the-go. Its versatility is one of the things I love the most about it! You can change around the toppings each time you eat it, and each batch of chia pudding is good for 3-4 meals, or many more if you eat a smaller, snack-sized version, instead! You can also mix up the citrus fruits, using oranges or limes, if you would like to change the flavor of the chia pudding itself.

Ingredients:

  • 1 14 oz. can Full-Fat Coconut Milk

  • 1/3 cup Almond Milk

  • 1 teaspoon vanilla

  • Zest of 2 lemons (or oranges, limes, etc.)

  • Juice of 2 lemons (or oranges, limes, etc.)

  • 1 tablespoon honey

  • ½ teaspoon turmeric

  • ½ cup chia seeds

Mix together all ingredients except for the chia seeds in a medium-sized bowl with a hand mixer. Pour contents into a large mason jar, then add the chia seeds. Secure the lid and shake the jar so that the chia seeds are evenly distributed. Mix again after 30 minutes to make sure all the chia seeds do not sink to the bottom. Allow to sit overnight and the pudding will be ready in the morning!

Top with any Kite Hill, So Delicious, or other non-dairy yogurt and any fruits, berries, or nuts that you prefer. I usually use the Strawberry Kite Hill brand yogurt with blueberries, raspberries, blackberries, dried coconut, and almonds, but feel free to add whatever toppings you like! You can put together the parfaits in a small mason jar the night before and have a delicious breakfast on-the-go. I usually get 3 servings out of it, but it is possible to stretch it into more servings if you like!
