Beets! Beets! Beets!

Beets are a super food, but many people have never eaten fresh beets and are not sure how to best prepare them, so I decided to write a post on it. Many people have tried canned or pickled beets, but they just don't compare to freshly prepared beets! There are two types of beets available out there that I use. Golden beets and red beets. I think both are delicious, and both have different nutrients, so I usually get both and mix them together. Golden beets are much sweeter and less earthy tasting than red beets, similar to a cross between a carrot and potato. Red beets are earthy and rich tasting.
