Dairy-Free Mashed Potatoes




Everyone loves mashed potatoes at the holidays. Traditionally, they are made with pounds of butter and cups of cream, but some of us must avoid dairy (plus, it is better for your body to avoid dairy overall). This recipe tastes just like traditional mashed potatoes, but those of us with dairy intolerances can enjoy them, as well! They are creamy and scrumptious, the perfect holiday treat!


Ingredients:

(*can easily be doubled to make more*)

5 lbs potatoes

¾ cup full-fat coconut milk

8 tbsp ghee

1 tsp salt


Directions:

1. Peel and cube the potatoes. Place in a pot and fill with water until all the potatoes are covered.

2. Boil potatoes until soft and easily pierced with a fork, about 15 minutes.

3. Drain potatoes and place in a standing mixer. Add all of the remaining ingredients and beat them together until they are combined and the potatoes are creamy.

4. Optional: top with some dairy-free cheese and oregano, or enjoy as is!
