Garlic & Onion Cauliflower "Mashed Potatoes"


Mashed potatoes are delicious. The carbs and calories they come with are not. Now you can have mashed potatoes without the guilt, plus you can sneak in an extra serving of veggies! Cauliflower contains large amounts of vitamin C, vitamin K, and vitamin B6 and folate, so it is very important that you get your fill. Garlic can help combat sickness, reduce blood pressure, improve cholesterol levels, and help detox your body. With this simple and delicious recipe, you can get plenty of both of these nutritious vegetables without even realizing you’re eating them!

Serving Size: 4-6 servings

Ingredients

2 heads of cauliflower

1 onion, sliced

3 cloves of garlic, minced

2 tsp sea salt

1 tsp black pepper

dried parsley (optional, sprinkled on top for garnish)

So Delicious Coconut Milk Cheddar Jack (optional, mixed in or sprinkled on top)

Directions

  1. Steam cauliflower until soft and easily pierced through with a fork, about 10 minutes.

  2. Slice onion and mince the garlic.

  3. While the cauliflower steams, sauté the onion and garlic until brown and fragrant.

  4. Combine cauliflower, onions, garlic, sea salt, and black pepper in a food processor, blending all ingredients together until smooth.

  5. Spoon mixture into a bowl. Mix So Delicious Coconut Milk Cheddar Jack through or sprinkle on top and sprinkle the dried parsley on top, if desired.

  6. Enjoy!
